What to do on snowy days…

I made my first ever successful recipe on Tuesday afternoon. No, no, no… I can tell already that you don’t understand. Read my lips: I am NOT a cook. I do not particularly enjoy cooking, especially when I have just come in the door from work. Also, I come from a family of male chefs… For some odd reason, the Lawton men are quite impressive in the kitchen. But me? Just not interested. So it is with great gusto and cheer that I present to you, dear reader, the first ever recipe from the kitchen of Rebecca Lawton Tredway. It might be the last, too. Who knows when such inspiration will strike again?

Simple Chicken & Rice Soup

5-6 c water
4 chicken bouillon cubes
1-2 frozen chicken breast halves
1 packet Lipton onion soup mix
— oregano
— parsley
1-2 c cauliflower florets
3/4 c chopped carrots
1/2 c white rice

Add water, bouillon, chicken breasts, onion soup and seasonings to crockpot — set to high for 3-4 hours or low for 7-8 hours. One hour prior to mealtime, add vegetables to the crockpot and shred cooked chicken. Twenty minutes prior to mealtime, add 1/2 c white rice (I used basmati).

Voila! Easy and delicious homemade chicken soup created out of what you’ve got in your cupboards. If I can make it, anyone can. (Note: all measurements are estimates.)

    i get it! it’s from friends, when joey is auditioning for a soup commercial. ha ha. that makes me chuckle. i mean laugh!

    “angels in america” – on hbo. the first half was last sunday, the second one is tonight.

    the scene of which i spoke is one featuring emma thompson as a hobo guarding her soup from meryl streep, a mormon mother lost in the bronx. it’s quite hilarious. and rather heartbreaking too.

    b, how was “angels”? it came through lincoln at the lied (in original form as a play) and i think i was scared away from it because of the homosexual story. however, now i’m wishing i had seen it and had thought through the story’s issues. (of course, in jr/sr high i didn’t have a whole lot of discretionary abilities!)

    rebecca: it was really good. difficult to watch at times, but ultimately i’m glad i did. it was heartbreaking and at times i felt like weeping for everyone. i just felt overwhelmed by all of the sorrow and pain happening, but in the end, slightly encouraged, though their view of god is so sadly skewed. even though it’s set in the mid-80’s, it’s still relevant to today. it wasn’t all sad, either; there are a lot of laugh-out-loud funny moments sprinkled throughout the whole thing.
    so, i would say it’s excellent, but not for those who are offended by (homo)sexual content.

    when it was at the lied, did they do both plays (millenium approaches and perestroika) or just one? and if they did do both, did they do all 6 hours at once, or one the first night and one the second?
